Digging them out like that destroys the hole, and unstabilises the salt cooch banks. Erosion is next; and one less hole for crabs to mault in. And no, they don't just dig a new hole overnight. Some holes get used for half a century!

We catch in Sydney, never before mid november (poor things are starving as they have eaten their muscles while hibernating over winter) and let anything less than 1kg go. Legal size is way, way too small. They are the last thing we want fished out!!!
And for below, yes they could probably take a hand off - if they are a decent size.

With this method we're using, if we unearth a female all we do is move it along the burrow a little and carefully replace the dirt back into the hole.
I've seen one white woman well, probably American or European, chasing loose mud crab and caringly picked it up with her hand, followed by a deafening shriek! (inside Carrefour Supermarket)
First we look for a crab burrow, and select one with the biggest entry hole. We then insert a wire rod down the burrow to feel around for a crab. You'll know when there's a crab there as the rod will strike a hard object, much like a rock. Sometimes the crab will move or grab the wire which guarantees there's one down there. Next, we pull out the wire and see how far along the burrow the crab is (they burrow horizontally) and then (carefully) dig at that particular spot to intersect the crab.
