I'm 16 (a guy) and I can't live without chocolate chip cookies, this is a great healthy alternative. I usually don't bake, but when it comes to cookies I do and always regret the amount of sugar and butter I add to make my cookies. Anyways, this took me less than 40 minutes (a new record!) and the cookies tasted really good...and I ate like 10 cookies in less than 20 minutes(new record!). The crispness is what I really like about this cookie. Thank you!

My daughter, Chelsea, is 32. I am 60--will be 61 on December 15! Rick and I got married when I was 21! January 23 will be our 40th wedding anniversary!

I didn't mean to imply that it is unhealthy--It just contains both fat and sugar, and I substituted the pecans to cut calories a little bit. Personally, I prefer the coconut (or both). Thanks for bringing this information up!
If you drop them by rounded teaspoonfuls 2-inches apart, it will make 3 dozen. I made mine a little larger and formed them into circles, so I only got 2 dozen. Thanks for asking!

I really enjoy cookies but seldom eat them because they are usually extremely unhealthy. These cookies aren't exactly "low calorie" but at least they are not empty calories like most other cookies. This has some healthy, beneficial ingredients so I will surely give this a try. They sure look delicious! Thanks Betty =)
You're welcome! What I was trying to do was to get away from your average "sugar cookie" with very little nutrition! And, like you said, these have some really healthy ingredients, even though they have the stuff that makes them taste good, too! So, I think you can eat these without feeling too guilty! I workout 4 times a week. I eat *lots* of fruits and vegetables and tuna, leaving not much desire for unhealthy things. I do love good food, but I only eat small portions of foods that are high in fat/sugar. I do work at it, but I find it very easy. If I want something like chocolate cake, I will eat a whole apple first, and then just a small sliver of cake--and I'm completely satisfied. Nothing is ever *off limits*--just sometimes a small portion. It's just a lifestyle choice that works for me.
You're welcome! I hope these are near to what you had in mind. You can use less sugar, or maybe use a sugar substitute that can be cooked, but I don't think you can reduce the butter or flour without losing the consistency of the cookie. I did think of another couple of recipes that may be healthier--carrot bran cupcakes and oat bran cupcakes. Are you interested in either of those? I will keep looking! Thanks for your sweet comment!
