I agree with the comments about soaking. Use dry chips or pellets, get them smoking, then move them away from the high heat. They will smolder and smoke for a long, long time.
if you don't feel like spending the extra money for that smoker box, you can always soak some wood chips, then wrap in some tin foil, and poke some holes in to let the smoke out.
I cant afford a smoker box so i used a sheet of aluminium foil and i wrap 1/3 of wet wood and 2/3 dry wood and i poke some hole. if i want alot of smoke i poke more holes.

Thanks! We do need to cut the lawn, though, and stain part of the fence again. That was tilapia. We marinated it in my lemon herb marinade and served it with the butter sauce. You can find both of those videos on our channel. Cheers! Jason

I used to use soaked wood chips, but realized it just wastes my time. I've never had a problem using dry and it gives such a better smoke flavor.

Why soak the wood chips. They won't produce smoke until the edges become dry anyways, so might as well use dry chips at the beginning.

You can just roll up some aluminum foil around wet wood chips, but I'd still rather soak em and put them on the side of the hot source.

I just put the wet chips on my charcoal shortly before cooking. They catch fire and start to smoke nicely.
