interesting concept, you say the heat doesnt cook the meat, but the smoke does? you gotta explain that one fella.......so why do things cook in a heated oven when there is no smoke?
True Rainofwalrus, and funny how people get BBQ and Grilling twisted, they think they grill it and slap some sauce on it, then its bbq WRONG! Also I understand some folks use water pans and some use fresh "Green" Oak or Hickory, If I could get ahold of some apple wood i would use 25% oak 25% Hickory and 50% apple, but thats for pork only, not to shure on brisket

wrong! "slow and low" heat cooks the brisket, not smoke. otherwise it would be a cold-smoke process, like fatback or curl.
