It also depends on where the roo is from. Most supermarket roo tends to be tough, plain or has a bad taste. The best roo tends to be those you get yourself from areas with few hills further inland, away from human habitation.
Horse IS quite tasty. Horsemeat however have a high content of bloodsugar an will therefore easily stick to the frying pan. Sweet an tasty meat!!! :-)
Roo is better than beef, Cheaper too. Buy it from the store for fillet steak about $15 a kilo.. Beef fillets about $45 a kilo. Almost fat free too, so awesome meat.

If it's tough you're clearly cooking the shit out of it. Rare, or at the most, medium rare is as far as you can take it.
This would affect the "lack of flavour" as well.
