@ClaudinaAizpuru That's AWESOME! To answer your question, I've never done just straight up carrots. I have, however, taken a similar paste to a combination of Cucumbers and Carrots, skipping the Salt Water Bath altogether. I find that it needs to be eaten up waaay quicker though. Hope this helps ;)

@TheQueenKoKo some Korean ladies swear by it. I personally don't know too many obese Koreans but this can also be attributed to the fact that in Korea, there's A LOT of walking and even here, in my household, we eat a lot of fish and raw veggies along with our Kimchi

I use my unused paste within the month (I hear it freezes forever) and Kimchi according to my dad NEVER goes bad...personally, I'd eat it within 3-4 months (but opinions greatly differ on how long it stretches). I had Kimchi Jjigae (soup) in Korea that was made with Kimchi that was fermented for 3 years!!! Can you imagine?!
