  • Please why every dish or anything you see that is adopted or used by hispanic cultures in the U.S you asume it´s Mexican? You are the greatest country in the world, so act like it! You have the incredible possibilities of live in a country with a huge cultural diversity it would be great if you can learn from it, not just stereotype like you usually do it´s not that hard, just simply make a quick search and find out where the flan is from.

  • Most mexican flans is made with: 1 can evaporated milk (instead of media crema) and 1 can of evaporated milk.

  • Hi - great video. I am cuban and was told "don't ever stir the sugar!" I was told to move the pan around on the burner.  This always made the caramelizing of the sugar a nightmare. So I avoided making flan. I didn't use your flan recipe but used your carmelizing method - so much easier. The flan is the oven. By the way, I use an old aluminum (I know that's not good) pan that belonged to my mother. She always made her flan in it so it's a tradition. Again, thanks for the info. Adios!

  • hey there, well i tried doing the flan. The sugar came out perfect i did it like an experte hehe i'm so proud lol. However, after mixing everything and putting it on the oven. I used a dark metal pie mold and the flan wouldn't cook i waited for an hour and 15min and nothing?!! how much longer do you think ? :((

    I have never used a metal pan to make this, so I do not have any advise for you, sorry.

    You also have to use a water bath to make this like I show in the video, I admit that the water bath is not explained very well, but it is there.

    Hi, thanks for the quick answer. Anyways it turn out to be amazing hehe . Yesterday i baked it for an 1:15 and when i saw that it didn't cook i just turn off the oven and left it there. At night when i got home i took it out and just put it on the refrigerator just in case it did came out good and it sure did. This morning i woke up to an amazing flan ! Thank you so muchh :) BEST FLAN EVER!!!

  • A tip to make the caramel not harden so fast in the pie dish: while you preheat your oven preheat the pie dish along with it. So that it's hot/warm when you pour the caramel in. Of course this means you can't use your bare hands to turn the pie dish to coat it, just use some oven mitts or towels :)

  • Im sure that is delicious but that is not the original recipe of the mexican flan,mexican flan is, 5 eegs,1 evapored milk can,1 sweetened condensed filled milk can,1 philadelphia cheese,1 vanilla tablespoon,the same process,do this and then you tell me what you think.

    If the sugar gets too dark, it will go bitter.

    In the video my flan is a little over baked and a too dark.

    When it comes out of the oven, it needs to jiggle in the middle.

    Be sure to put your pan into another pan that has hot water in it .... that will make it bake more slowly and evenly.

    I made this again 2 days ago, and it came out over done.

    I baked it 1 hour at 350 degrees.

    Maybe I should have baked for 45 minutes, or maybe my oven is too hot and I will have to get a thermometer and check to see if the oven is baking too hot.

  • I have made this recipe more than once.

    It is a Family Favorite. I substitute Sugar for Agave Nectar.

    No need to cook Agave Nectar just drizzle on Pie Plate before adding Egg Mixture.

    It taste just as good and wont put your Diabetic friends into a Coma.

    Pro: Less Work, Diabetic Friendly

    Con: More Money, Harder to find then Sugar

    I also under cook my flan for a more creamy texture.

    I do not recommend this to everyone. Under cooked eggs can be DEADLY!

    But I like it.

    You fill your pie plate or whatever pan you are using with the flan mixture.

    Put the flan mixture pan ONTO another pan, and place in the oven.

    Put water in the outer pan (in my case it was a metal sheet pan) and fill close to the top.

    The idea is for water to up 1/2 way on the outside of your flan to even the cooking.

    In the video I put a dab of water into the metal pan, that is where the water goes.

  • You don't have to add the tablespoon of water to the pan. I used to use Justin Wilson's recipe that called for equal portions of water and sugar and so you waited for all of the water too cook off before it caramelized. What a joke that was. The french just put the sugar in the pan and heat, you have to be just as diligent to stand there and stir.

    Instead of vanilla, brandy or cogniac, or expresso, you can mix it up.

    Recipe looks great, I'll definitely try it.

    I have not tried the freezer, but it should work!

  • this is just a few common sense tips:

    1. don't rush ahead!! make sure that your pie pan can fit into the deep pan!!

    2. if you can, pour the flan mixture into the pie pan as you put it in the ovem, same goes for the hot water

    3. the exact measurements can be adjusted. i used a cup of sugar for the caramel and it was WAY too much. i stil have 2/3 of caramel left over!! and as far as the flan mixture, it just barely fit into my pie pan and spilled quite a bit.

    Sure you can make it in any kind of pan.

    You can even never turn it upside down and just scoop out servings.

    The presentation would never be the same or as dramatic.
