I tried this tonight, had trouble with the new propane tank on the grill, so I pan fried it. It was wonderful. Can't wait to try it again on the grill. BTW, I'm not good at all cooking fish of any kind and this got great reviews from my family. It's a keeper!

The soy sauce cuts down the sweetness of the syrup so it is not too sweet.

Salmon is one of those fish that really has a unique flavor where many types of fish can be a bit bland.. I guess white fishes like cod or halibut etc.. but here in the N.W. we obviously get the great Alaskan King, Sockeye and others and I myself enjoy that natural taste...
Hey Doomer79, thanks again for stoppin' on by. You may have read a bit more into my comment than justified. Fresh NW Salmon is one of my favorite fish to do on the grill for sure. But if i'm doing fresh brook trout, or large mouth bass, north Atlantic cod, ETC i don't add much but butter garlic, and S&P. That awesome delicate taste of this type of fish needs nothing more. But Salmon with it's distinct flavor does well with sauces on the fillet, steak or on the side. Either way, it's good eatin'
Where did you get your flat square iron pan? The only one I can find in stores looks just like yours except it has ridges on the surface. Any brand suggestions or web sites?

Not so sure about maple syrup sauce with salmon - I prefer to use dill and lemon and olive oil myself, but I just might try this for a change.
