This looks so YUM! I can't wait to try it. Would it work well with making it in advance, freezing it and then baking it in the oven or microwave when we are ready to eat it?
To make it easier for us not to get too busy to make a fresh meal from home, I want to find recipes that are good for making a few weeks in advance and freezing them. That way I can pick 1 or 2 days a month to do all my cooking and freezing and we can stay on track with our new eating lifestyle :0)
@trisheilers yeah, this would be ok to freeze. I haev a new recipe search function on the site, if you go there you can tick a box and search for all my recipes that freeze well :)
I am a new vegan and I will be cooking this recipe this weekend! I love spicy and I like how your recipes are healthy and seem to be pretty easy to make.
I tried this recipe tonight and it was so delicious!! Thank you! :) I am a bit worried about over indulging though because of the nut butter (I used almond butter) I am trying to lose weight so should I limit how often I eat this recipe?
You're funny with the "it's not spicy enough" because I know you usually don't care for heavy spicy :) It's so nice watching your vids. I learn a lot! Thank you.
You posted this just in time for lunch :) I used tahini for the sunflower seed butter and madras curry for the cumin and paprika. Super fast, yummy and spicy! Perfect for a cold January afternoon.
@northernSars haha... well, it depends how good the paprika you're getting is :) if it's old, it won't have much flavor left, and some of them are spicier than others.
i was thinking that if on of the kids hadn't 'borrowed' my food processor i could just grind a package of kombu down to powder and put it in a jar so i can add it by the teaspoon... i have to get another food processor since 'borrow' means something different to my kids when it's my stuff.
to everything i make (soup, rice, beans etc.) i take a 2x3 inch piece of dry kombu and cut it with scissors until it's in 1/16th inch pieces because it's all mixed without big pieces to have to fish out-- it's better that way!
@starbluewhitered the dressing in this recipe would be great with almond butter, too :) you can add some hot sauce to it, or even some chopped jalapenos
@healthyvegan I did not explained well.. meant a warm sauce made with almond butter and whatever else.. I don't know of any recipe.... sorry. for the confusion.. but your idea of adding almond butter to this and chopped jalapenos could be good
@starbluewhitered aah... if you wanted to warm this sauce, you could add some almond milk and I think it would be pretty tasty... haven't tried it, but I think it'd be nice :)
@Lassyran no problem - not everything will appeal to everyone :) This dish would be fantastic with just about any bean instead of the chickpeas. If you like soft ones, I'd probably go with a white bean (navy, cannellini or Great Northern), or it would be great with black beans, pinto beans or black eyed peas. Anything that will absorb the flavor, really. You can also do this with just the veggies & dressing, and have over fresh greens or cooked quinoa/brown rice/etc. hope that helps :)

Looks good. I might steam the veggies with the juice from canned tomatoes instead of water and add some tomatoes later.

I think this is the first recipe of yours that I haven't wanted to run out and eat immediately. :(
I dislike the texture of chickpeas, do you have any suggestions for substitutions? The flavours sound great.

@healthyvegan Thanks for the quick response! I think I'll try it with just the veggies over quinoa - best grain ever. :D
