@vigeto normally every shop have thier own soup base! And it is normally cooked using pock bones and meat. And one things that people can't copy is the time they use. Japanese like to cook their ramen soup as long as possible.... So some might spend 6hrs to cook.. The longest i know is spend about 3days to cook it...

Haha, we've got them, it just depends where you live. There are a bunch here in New York, unfortunately, they're all clustered together. D: All in downtown Manhattan, annoyingly enough. I'm sure there are a lot more in the west coast, considering how close to Japan they are. :)

it seems that japanese eat the soup with scum. the blood and insoluble fats are retained in the soup. It is not as pure and clean as Cantonese or Vietnamese soup.

Hmm....you seem to have something against the Japanese...this is only one type of soup. There are many types of soups in Japan (Clear,thick etc) THIS particular one is made from PORK BONES SO THERE IS NO BLOOD OR IMPURITIES. Scum and fats are cleared during the cooking process. Its boiled for a long time till the soup becomes creamy. have you tasted Tonkotsu?? Do you make Tonkotsu?? No?? Then don't say anything
