  • @DrGM818 I think you may be referring to Allemande sauce, which is actually based on a Velouté, which is made with a light stock in place of milk.

    no , it's exactly the same ... but an egg is added with very fast mix to prevent it from getting cooked ... no stocks at all

    I just tried it, made it with precision as suggested by your recipe video,

    Its really fantastic, I was not having white pepper, so what i did, i used deseeded green chillies,

    I mixed it in Dal Makhni.....................WOW

    Hmmmmm..........Its like I have choosen a wrong profession by becoming an engineer, I should have been cook,

    cooking thrills me.

    I wonder, would it not also be good to infuse the onion/clove/bay leaf (or other flavors) into the milk as it is warming? Also, must wheat flour be used in white sauce, or may one use corn starch or white rice flour? If so, are the proportions, or techniques different?
