  • Cherries and chocolate go so well together. I tend to leave out the nuts though since my hubby tends not to like them. I just make up the difference with more fruit or some marmalade.

  • although i like your recipes this one is not a christmas cake. not because of the milk but because of the very very short shelf life it has. they are supposed to be soaked in alcohol in order to keep them indefinitely. best regards from cyprus

  • Wow, I have never in my life seen a christmas cake recipe using chocolate milk and I make one almost every year. I was going to skip this year, as there are only going to be a few of us this christmas, but this looks so eay, I will make it using about a third of the measurements. Thanks Nicko =D

    Also, would you consider making a video for a gingerbread house, but with cinnamon biscuit instead of gingerbread? I haven't made one before so I need a recipe from a source I can trust =) Thanks

  • this cake is no where near dry :) very moist, soft but not chewy. Hope this helps

  • yes, just make sure you add baking powder to the mix. About 3 tbls will do. If you dont add it, it wont rise :)

  • a recipe iv always used, at the end you put dates and almonds on the top, then make a glaze out of apricot jam/jelly and brush it over. Yum =]

  • What's the difference between self rising flour, and just regular flour? Because I live in Taiwan, so if I buy the ingredients, they'll be in Chinese and I'm afraid of getting the wrong flour. Would regular flour ruin it?

  • self rising flour is exactly the same as regular only it has salt and baking powder already mixed in. For every cup of regular flour just add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.

  • I would replace the chocolate with a strawberry reduction - just put strawberries in a pot with some lemon juice and sugar over a low heat, the strawberries will soften and you will be able to much them into a thick sauce. Leave it to cool and follow the same steps :)

  • Very similar to my mothers recipe, but she doesnt do the chocolate milk step. She simmers the fruit with rum, water and a few other things instead (simmering probably shortens the soak time). Looks very similar though.
