I don't think the Grail Knight would die, it's his job to protect the Holy Grail. Personally I always thought that he used the power of God to rebuild the temple, and he kept going on protecting the Grail.

It is likely that with the Grail lost within the bowels of the Earth and likely destroyed, the Grail Knight's task was complete and he finally succumbed to extreme old age if the Earthquake didn't kill him.

@plugginmuffin Acutally, Indy didn't do much of the killing. A lot of them killed themselves or the artifacts in question killed them. In the first, the Ark killed most of the Nazis toward the end, the third, the Grail Temple killed a good many. The second, yes Indy did some more direct killing.

@Luixmai He WAS only immortal in the cave, up to the great seal. The knight warned indiana not to take the grail from the tomb, but he never really said anything beyond that. We know that he IS immortal because he drank from the cup before hand. I assume he still is immortal and the same restrictions apply but the seal is lost and so no one ELSE can become immortal. It isnt really clear, however, if the grails departure was retroactive or not. I dont think so imo.

The knight's death is probably up to the viewer. Thanks to the Grail, one could be immortal as long as they stayed within the sanctuary. However, we don't know if the knight's immortality remained intact after the presumable destruction of the Grail, as well as the obvious destruction of the sanctuary. If this is the case, the knight could/would survive the earthquake were he to remain at the location of the sanctuary.
