You can use whatever available in your area. I know that it is hard to find sometimes few ingredients....you can make gravy using soy sauce, ketchup, corn starch dissolve in water and also chili sauce is easily available in India...

Great recipe!!! I'm making that for sure, but I have a question how is your panner so soft? Like what I mean is when you cut your panner it is soft and cuts so easily? Do you buy store bought panner? Also do you put your panner in the frozen or the fridge? let's say if I buy store bought panner should input it in the frozen or the fridge? If I put it in the frozen should I have to leave it out in the counter for few hours? Because frozen panner is not going to cut like your dis.
