  • Just an FYI, after the eggs are boiled and you are cooling them... just shake them in the pot a bit to crack the shells, they will peel off in seconds.

  • Gotta ask, how can you guys eat such large amounts of mayo? I live in one of the nordic countries and the mayo we get from tubes is put in a thin strip on top of SELECT open face sandwiches. Anymore and we would throw up emidiatly! Much less pour it in stuffings. Is your mayo not really mayo or what? thx

    cut the mayo and the mustard to half and its a great meal. just saying. That said i have to go boil some eggs.

  • Awesome ! made some egg salad sandwiches in about 15 minutes :) easy recipe. 3 eggs yields about 2 sandwiches.

  • lol "what did this take, 3 minutes?" Um no, 10 minutes to prep, then peel em for 2 mins, than chop it, stir it, do the bread. this takes about 20 minutes sir!

    But good.

  • Try adding chopped onions, lettuce, and green pepper right into the bowl and mix with the other ingredients. You will love it!

  • Just made some today, I have to agree with the comment about fresh ground pepper, it also gives the mix a bit of a kick. May try adding some diced pickles or celery for texture as well. Thanks :)

  • There is a much better way to hard boil eggs. Put them in cold water, bring to full boil, cover the pot, turn off the heat and let sit there for 11 minutes. No cracking, and perfectly cooked.

  • Egg shells- Despite what you may have heard, egg shells do not sharpen disposal blades. I’m not even sure how someone would think that would work. Mostly they just end up clogging the line.

  • @1Explosivez1 I agree! I even make my own. Its beautiful. Still, in this kind of recipe you add all the mayo you want into the sandwich filling. It makes no sense to add more onto the bread. Its not a crime to do so or anything, its just redundant. Its like serving yourself a bowel of pudding, You can have as much as you want, but you make sure to save a little space for a garnish of pudding.

  • Thanks LaLaOa! You are so right about calorie counts/accuracy. When we do nutrition profiles, we check and then re-check sometimes using different software calculators. On this recipe, for one sandwich I come up with: 2 slices wheat bread - 220 c; 3 eggs - 210c; 3 T mayo - 270 c; 1 tsp mustard - 5 c = 705 calories. I appreciate your point however and want to say that Chef Paul must have been very hungry on the day we shot this...as this amount would normally make 3 sandwiches, not 2 :) kc

  • Cheese spread? Sure. But consider this: In its true form, cheese has about 3-4 ingredients: milk, (maybe cream) rennet (enzymes), salt. Count the number of ingredients in the "cheese spread" and whey it (cheesemaker's joke) against mayonnaise. (Mayo should also have 4 ingredients: oil, egg, vinegar, salt.)

    If you stick with the more elemental foods (that is, stay away from foods with a litany of man-made ingredients) you'll live a healthier and longer life.

    1 thing I hate is my friends always say I'm fancy when I eat egg salad or egg salad sandwiches, but really an egg salad sandwich is probably the same price as ramen noodles or a grilled cheese, if not less, and it's actually a bit easier to make for someone who can't cook. if you like egg salad there's NO reason you can't make it yourself - PLEASE don't eat those vending machine "egg salad*" sandwiches

    *: may or may not contain actual eggs.

  • I'm SO glad I found this. Not because I needed a recipe, but because every recipe I've seen says to JUST bring the eggs to a boil, and then turn the heat off and let them sit for only like 3-5 minutes. This has never worked well for me, so I boil them for about 10 minutes like this vid. Everyone always says I do it wrong but it's nice to see a recipe that agrees with me. everything else I agree with although I PERSONALLY prefer chopped eggs - just a personal thing, grated is fine too.

  • If you make your own mayo, the eggs can spoil if not adequately refrigerated. Pre-made mayo, however, has been Pasteurized. I suggest looking for another culprit... and clean out that fridge! ;-)
