i would love a world cooking tour trip. just need someone to send me some money. and don't worry, my spoon is just a faux wooden spoon. it's actually plastic.

  • there's a much better and easier way. wash your new pan and dry then place on powerful gas stove and heat for about 15 mins on max power untill it is darkened in colour. swirl oil around the hot pan after it has heated for about 15 mins then wiope with tissue and thats it. Use the same method chinse chefs use for wok seasoning. do not be affraid. i no its no big deal but i put it on my powerful wok burner and heated it untill it was glowing red and darkened

I've seen some videos of people using super high heat to break in a wok. Talk about a more exciting way to operate... I guess too exciting for my kitchen.

  • what's the inside diameter of the flat surface of the pan ?

  • @toyopl

    it is about 7 1/4".

  • Does it really say that remowe the beeswax ? I was told that to only wash it with hot water before use and not to remove the wax. The wax makes first patina to the pan..

Maybe i was told wrong ? Can you post a video how your pans patina looks today, has it improved the handling and performance ?

  • @ed9driver

My pan is starting to season nicely. I'll see about posting a vid.

Perhaps the de Buyer instructions aren't specific enough in regards to the wax and boiling water. Wikipedia has a good entry on seasoning and says some manufacturers use a wax coating to prevent rust and this must be removed prior to use. Oil needs to polymerize onto the metal surface of the pan, so the wax can only get in the way. And I could never see wax improving the taste of a NY strip...

  • Is this real ? The mineral-b pans are ready to use, you are not supposed to remove the wax! You went wrong from the firs seconds.

  • @ed9driver

Um... can you read? de Buyer includes the instructions for seasoning with the pan...
