Long story short, I'm glad to see that Tile Fish are procured in such a normal manner. Because we went to a terrific restaurant on South Beach called AltaMar, and I had the Tile Fish with Artichokes. It was really special the night I had it. When I raved to an old friend about it he got a mischievous look on his face, and let me know that when he was growing up Tile Fish were the "garbage fish" which could be easily caught because they favored sewer openings. Maybe he was right, but not always.
