i have been playing for 31 years and have a degree in Jazz Guitar, own a music school and make my living teaching music. You CAN play an Em7 chord without the first two fingers! In FACT, it's better played with fingers 2,3, and 4. This way you can make the chord an E7 thus allowing you to play a blues or such things like that. using the fingering on this video is OK, but certainly not the best or natural way as you describe.
