Part 1 - I think, by far, the answer: "G-d paints them ONE AT A TIME" is better (and immensely more elegant). You claim: "It used to be a matter of faith - now it's a matter of objective reality". Well - are we to believe that the connection our predecessors had to G-d was somehow inferior due to their lack of knowledge of the latest developments in quantum physics or big bang cosmology?

The problem with the latest 'scientific' explanation of origins is that it smashes the Name[therefore the character of the Maker]. Death, sickness, abheration, etc are all seen as normal rather than as an affect of not listening to the Maker's instructions.
I don't get your comment. The RAMBAM was a physician and scientist. It makes 100% sense for a Rabbi to be a scientist and make the connections between Judaism and science. Not learning science and ignoring the world around us as insignificant is not a Jewish way of thinking.
