  • try to let the butter melt and stops bubbling then add the flour and wait for fat stripes to be seen on the bottom of the pan before you add the milk since you dont want the flour taste in your mac and cheese. its just a small tip but i've noticed some diffrence when i didn't (also for soup or other sauces)

  • tillamook cheese is the best of the major brands i've tried. i would compare it to they way that a fine chocolate is smoother. tillamook cheese is just really really smooth. its not oily really at all.

    sometimes i'll buy a block of it and eat it by itself peeling the wrapper like a banana peel as i go.

  • During this Mac and Cheese encounter we need the macaronies so stay inside the water to avoid an annoying wipe of the stove. We also need the cheese to maintain focus on smelting... This while the milk healers tries to keep the chese from burning and give them a nice moist consistency. If the stove goes into enrage mode you can just forget about looting the stove...

  • THe amount of milk you add to your "roux" (the flour/butter paste) vaires and the best way to do it simply to add the milk a little at a time under stirring, allowing the mixture to boil between additions as the sauce will only thicken when boiling. Simply continue to add milk until you are happy with the consistency. Making a good sauce from a roux is one of the more useful, as well as difficult skills to pick up in the kitchen, and this dish is delightful way to do it. Thanks for sharing.

  • I forgot to add get rid of that salt. use it to boil ur pasta. Cheese doesnt need salt added to bring out the taste. The paste should be cooked past the wet stage because you need to cook out the flour and therefore the flour taste

  • for ur basic roux which is what you call your paste its equal parts flour butter/dripping and the required milk for either thick or thin sauce.

    For instance 50g butter 50g flour (350ml milk for thick sauce) and (500ml for thin sauce)

  • @kilthro It helps plenty. Keep in mind that this is a very typical cheese sauce; you start with basic butter&flour and add milk, which is béchamel, aka white sauce. Then you just add cheese, seasoning and voila, you have a cheese sauce. All basic sauces start out the same way; flour&butter + liquid.

  • Hey Ciderhelm!! Awesome recipe and I particularly liked the "Happy Paste" part. Being a Gamer / Chef myself, I really enjoyed this video, it was entertaining. Splended example on how to make a Roux aka "paste" which usually consists of equal parts fat to equal parts flour cooked to 4 different levels white, blond, brown, dark brown. The later two don't thicken as much as the first but do impart a more smooth nutty flavor then the first two.

  • ciderhelm I must say very informative guide I downed this encounter without so much as a hitch with my guild altho we used a splash of tobasco sauce and a tablespoon of ground cayenne pepper to give the boss a bit of a spicier taste to his already normal abilities

  • The measurement of the milk is about a Quarter of a Gallon or... 2 Pints or... 4 Cups or... a little less than a Liter (947 milliliters to be exact).

  • An interesting recipe and might have actually tried it myself but that's waaayy too much salt for my taste. Keep in mind that the human body needs so little salt that it gets it naturally, and there is actually no need to add it. Ofc you'll want to add it for flavor but if you need that much salt for one cassarole to produce the flavor, then something's gone wrong.
