try to let the butter melt and stops bubbling then add the flour and wait for fat stripes to be seen on the bottom of the pan before you add the milk since you dont want the flour taste in your mac and cheese. its just a small tip but i've noticed some diffrence when i didn't (also for soup or other sauces)
tillamook cheese is the best of the major brands i've tried. i would compare it to they way that a fine chocolate is smoother. tillamook cheese is just really really smooth. its not oily really at all.
sometimes i'll buy a block of it and eat it by itself peeling the wrapper like a banana peel as i go.
if tillamook cheese were a woman, we would get married. even if she said no.
mmmm Tillamook cheese is the best and i dont even like cheese that much. I went to the Tillamook cheese factory in Oregon and they had great ice cream there too.
Ctrl-Alt-Chicken... sorry... I love it, and I won't let it die. I plan on reviving CAC soon... just not as CAC. I will be making a cooking show... I just ... ya... *sigh* I haven't the methods and the means right now to put it out :( :(
During this Mac and Cheese encounter we need the macaronies so stay inside the water to avoid an annoying wipe of the stove. We also need the cheese to maintain focus on smelting... This while the milk healers tries to keep the chese from burning and give them a nice moist consistency. If the stove goes into enrage mode you can just forget about looting the stove...
THe amount of milk you add to your "roux" (the flour/butter paste) vaires and the best way to do it simply to add the milk a little at a time under stirring, allowing the mixture to boil between additions as the sauce will only thicken when boiling. Simply continue to add milk until you are happy with the consistency. Making a good sauce from a roux is one of the more useful, as well as difficult skills to pick up in the kitchen, and this dish is delightful way to do it. Thanks for sharing.
2) Whomever made the butter comments... take it easy there. It's completely un-American to use ANY less butter (or to substitute MARGARINE for that matter).
3) Dude... you are gonna scratch the hell outta that pan with metal utensils
4) Barilla - Check, Gold Medal - Check, Morton - Check, even generic milk - Check, but "Tillamook"? and "Tillamook" again?!? WTF is Tillamook? ;D jk
Looks scrumptious! Lay a few slices of "Tillamook" on top, too!
I forgot to add get rid of that salt. use it to boil ur pasta. Cheese doesnt need salt added to bring out the taste. The paste should be cooked past the wet stage because you need to cook out the flour and therefore the flour taste
I think it's important to ensure that the tanks, maintain taunts and focus on this boss. And to also watch our for rogues trying to sneak in behind and get a piece.
nice recipe. I boycott paula deen cookware (but can't resist her recipes!), she has it made in china. I feel like i have been betrayed by my neighbor!
LOL need a stick of butter and then Low fat milk ?O.o I mean seriously.. All the fat from the cheese and butter, what worse is the milk going to make it . Does look good though..
@kilthro It helps plenty. Keep in mind that this is a very typical cheese sauce; you start with basic butter&flour and add milk, which is béchamel, aka white sauce. Then you just add cheese, seasoning and voila, you have a cheese sauce. All basic sauces start out the same way; flour&butter + liquid.
Ohai, I'm gonna make this a LOT healthier by not taking an insanely fucking disgusting sized piece of butter, so I'm gonna cut off a barely visible part off of it, and then use the still insanely fucking huge piece. I'm sooo healthy nao :D
Hey Ciderhelm!! Awesome recipe and I particularly liked the "Happy Paste" part. Being a Gamer / Chef myself, I really enjoyed this video, it was entertaining. Splended example on how to make a Roux aka "paste" which usually consists of equal parts fat to equal parts flour cooked to 4 different levels white, blond, brown, dark brown. The later two don't thicken as much as the first but do impart a more smooth nutty flavor then the first two.
@Dinoschnaffy When he chopped off the end of the stick, I thought "Oh, OK. He's just using a little bit." Then he leaves the little bit sitting there and plonks the rest in the pan. Then I thought "God DAMN"
okay... his vids on wow are on point, but white people should stick to other things than mac & cheese homemade.... and the naration is anoying....... lol @ paula dean cookwear!

for ur basic roux which is what you call your paste its equal parts flour butter/dripping and the required milk for either thick or thin sauce.
For instance 50g butter 50g flour (350ml milk for thick sauce) and (500ml for thin sauce)
