Well I guess I'd prefer the term perfectionistic :) I have several prosharpeners, plus myself that use it. It's not for everyone, nor the ideal tool for all tasks, but nothing is. It's relatively easy to get a knife to what some people, including 'professionals', call sharp, but I aim a bit higher.
I'm going VERY slow here - it's a demo after all. I hand sharpen too. There's some things I do with this you can't do by hand and vica versa. My rates are pretty reasonable :)
I would assume that given the precision of your system and the use of non-proprietary stones that you have calculated in the degree difference within tighter tolerances that a Lansky or Gatco system which are a few degrees off plus or minus. Please correct me if I'm wrong
You are correct. i actually measure the angle, so there are no errors from how much the knife overhangs the edge, stone thicknesses, etc etc. Again accurate to as much as 0.1º.
Sharpening or even using knives has an element of inherent risk This is true of hammers as well or most any tool. I've designed this to allow maximum flexibility, but if you require a more restrictive setup, I can modify the basic device.
nice, but to me it looks like an edgepro apex on steroids, lol, similar design, only massive working table and much wider stones, and a few minor changes to the design...but...I LOVE my edgepro, so I am sure I would like something like this too...
This is a unique design, although there are a number of other sharpening designs. Ultimately they all rub stone to metal. Look closely and you will see many innovative and unique aspects to this design.
is this like a giant copy of the "edge pro apex"?

Mush easier and better ways to get a knife sharp.
I don't know of any professional sharpener that would use something like that. if he did he would have to charge a fortune per knife.

You are correct. Using the angle measurer gives 1 degree accuracy, but with a more elaborate angle measurer I can measure to as fine as 0.1 degrees.
