It seems that as stated previously in the comments is that both the 1st generation and 2nd generation links are mixed up. This is why you guys are experiencing the incompatibility issues so if the links could be switched would be greatly appreciated to avoid further confusion.

is this still the problem? If this is still happening do this:\

1. open itunes

2. turn off your ipod

3. unplug your ipod

now while holding the home button(with the square), plug in the ipod touch to the computer while STILL HOLDING the home button. Itunes should detect your ipod and you can restore!

I would recommend disconnecting from the internet before trying to upgrade to 3.0 again.

It's either one of two things...

1) Your don't have iTunes 8.2 installed yet.

2) When asked to either "save" or "open" with while your downloading, you hit open with iTunes (You're supposed to save it)
