But why have male and female animals in those 7 since male animals were the only sacrifices worthy of God?
On top of that the size of the boat was determined in the Bible and it's not physically possible to fit that many animals on that boat let alone fit their food for and be able to dispose of their waist for 40 days.
Why were those the specific animals God chose for sacrifices?? I don't know. I'm thinking it had something to do with the original sacrifices with Cain and Abel.
As for the size of the boat, I'll see if I can find something somewhere online in Google SketchUp to see the actual size of it. If not, I'll probably build a model of it myself just out of curiosity.

@themanofearth - Bah, all these calculations of "every single animal on the planet" in one ship is making me think of all the (nonexistent) room there was for all the poop. Mind you, I have two ferrets... and that's a lot of poop. Imagine approximately 2,345,678 animals in one widdle ship. (I hope they had enough plants and trees to grow with that manure! x)

They're both correct. In fact, you answered your own question.
1) The 7 pairs of "clean" were used for the sacrifices
2) The other "pairs" of animals were those that procreated.
scholars have estimated at least 45,000 animals were on the boat. So, needless to say, that was one HECK of a boat!!!
