  • you can gently heat the egg mixture over low heat stirring it to get rid of any bacteria and this also helps so you dont ned the alcohol too

  • @canadiancatgreen you need 60 C to kill bacteria, lower than that and the egg is woundreball to bacteria

  • @angelicsitz what I did was make this then heat it up in a saucepan or if you have a coffee machine use a steam wand to heat it up really hot, it goes great with coffee, with a shot of expresso, a bit of milk and the rest of eggnog.

  • So when adding the booze, do u add it just before, or does it matter? Will adding it make it spoil or something?

  • Maybe because I live in the N hemi, I prefer my holiday drinks warm. This was awesome warmed over a double boiler, but it'll need straining to avoid the occasional cooked eggy bits. I added a pinch of salt (cuz I always add a pinch to sweets) and a bit of butter too. DH said he'd prefer a bit more sugar (it was fine for me tho). Between the slight thickening from warming it, and the butter, it was decadent!

  • My grandfather had a raw egg mixed with beer powder every day for breakfast. Gross, but kept him alive and his hair black until he was way past 80 years. I've never had egg nog with alcohol, but I've had the "sugar and egg stirred well together" variety many times, never been infected with salmonella. Never even considered the risk. Paranoid people ;)

  • GET OVER THE RAW EGG. The risk of getting an egg contaminated with salmonella is 1 in 30,000 in the US. An egg is only at risk if there is prolonged exposure to the hen's fecal matter. The eggshell acts as an airtight seal, and eggs are washed within minutes of being laid. Furthermore, alcohol, salt, and sugar are antibacterial. If you ARE the unlucky bastard that gets salmonella, big deal. It's the 21st century. Out of the 142,000 Americans that are infected each year (not all by egg), 30 die.

  • @mistyaqua Thanks for posting this. My mom had me scared of salmonella when I was a kid but the more I've gotten into cooking, the more I've come to realize it's not a big deal. Even if you do get it, which is very unlikely, you'll only get sick. Big deal.

  • @mistyaqua the egg is not "airtight" the shell is porous and exchanges air and moisture with the outside. Bacteria can enter through the pores as well. Get over it yourself.

  • @john84753 The eggshell is a remarkable structure. It regulates gas exchange, provides nutrients, and also acts as a sort of microbe shield. You are right that it is not completely airtight because it is porous, but there are numerous barriers that prevent bacteria from entering (how do you suppose chickens have survived so long?) For further reading, I would suggest reading the studies done by the International Journal of Food Microbiology.

  • @maharley27 That is why you have to be absolutely sure of the freshness of the eggs. Otherwise, during the yuletide season, they sell it at food stores already prepared. Just add rum of course, which is why you have to be careful how much you imbibe... lol! XD

  • @BotanicalCreature: You have to remember that eggnog is not commonly made by scratch here. Most people buy it by the jug at the store. Although, I'm sure that our lovely neighbors to the north are just as clueless. .....Eh? ;o)
