I really like how your assistant is just standing there, barely assisting you. lol. I want to stand there, too, while my husband cooks. But, I'm NOT as lucky^_^!
noodles look soggy because they're precooked. next time presoak the rice noodles for an hour then add them in like that... THEN add water to the pan and let the noodles absorb the moisture to become soft... boiling and then REFRYING + adding even more liquid is what made them turn out like in the video.
