It's because the heat lamp is orange. It's ironic that you think the coffee looks burnt because siphon coffee comes out cleaner than a French press and it doesn't have the Starbuck's burnt taste. Quite the opposite of how you perceive it.
Great video. I went to the Blue bottle for the first time in San Francisco and enjoyed the coffee and experience. I didn't get the video but pictures. I agree with one of the comments that this one didn't show the measuring of the temperature of the coffee. I wonder did he forget or is it just something new that they have recently started.

It is just off of Mint Plaza in a very non descript building. It is the only one that offers Siphon Pot Coffee. They make the best coffee on the planet. They also make an incredible Kyoto style drip coffee that taste like bourbon. It takes 18 hours to cold brew one pot. It is very very good and very unique
I was a little freaked by the way the guy making it kept playing with the carafe, sticking his nose in it and such. Vacuum coffee is far better than the typical American-style automatic drip. I do second the aforementioned Aeropress, however I wouldn't put it above the vacpot; assuming you know how to use one properly.
never trust a sommelier who doesn't smell the wine. he was simply checking the quality of the brew, which he is responsible for. i also believe he was lowering the temperature of the carafe as he was holding the wet towel to the carafe.

This is just glorified "vacuum" brewing that has been around for a long time. It's not the worst way to make coffee, but neither is it the best. The brew made this way tastes good, but not great. The problem is that the brewing time is too long. Anything over about 30 seconds or so starts to extract the acidic portion of the coffee.
I don' t understand the exact chemistry, but I do know that since I started drinking coffee only made two ways: with an Aeropress, or with a "real" espresso machine, I no longer have ulcer issues. (Do I need to describe the exact physical symptoms? :eek:)

All this is is a Mr. Coffee with the heat source outside the machine. This is about the need to put on a show to justify the prices. Starbucks might get a little silly with the ostentatious Italian terminology but, other than that, they got it exactly right - good beans, good water, clean equipment.
No, not trolling; I really think this is taking it a little too far. I hope that the people who buy it appreciate the theater involved, but ultimately it is little burnt beans in really hot water. I am just okay with the type I make at home. Disclaimer: I do own a french press, and I do think it improves the taste. :)

Secondly, Syphon Coffee is merely a different method of extracting coffee, from a different region of the world. It does come off as a little arrogant when you bash that fundamentally.
Look, I am quite the coffee connoisseur but it's starting to become a bit ridiculous. I've had coffee from the 30,000 (of is it 50,000?) dollar machine and it was NASTY. The guy tells me they used TRIPLE FILTERED water, blah, blah, blah...and it was MUCH worse than the shit I make at home.
All you need are decent beans, pure water and you're golden. Grab some Peace Coffee and roll, baby!

I owned a Bodum Santos electric and it made good coffee. Siphons are great to watch.
