@cookiesNcream4cathyX They both are leavening agents to help dough rise but both have different tastes. Baking powder is a mixture of Baking Soda and Cream of Tarter. You may substitute baking powder for baking soda but it will affect the taste and you will need more, but you cannot substitute baking soda for baking powder.

Laura, I've made these pretzels, and they are delicious (and easy)! How do you store the leftovers and what do you do to reheat them? I put them in a ziploc bag on the counter, and they just didn't have the same texture as when they came out of the oven.

The last ones I didn't put in the water and just baked them but they were anything but soft :P I saw a recipe for soft pretzels where the pretzels were only "dipped" in water with only 2 tbsp of baking soda. But I'm not sure I want to try it again. I guess I have to admit I just don't fancy soft pretzels that way :) Thank you!
@dansan Ahaha, Ya! they might be hard come to think of it. I normally cover my bread up after with towels to trap the steam because I don't like it hard. My brother told me he never uses baking soda. And the recipe he gave me they were in the water for 1 min each side. I love soft pretzels but I prefer them without baking soda I think! Thanks dansan!

@dansan I will probably try it again tonight without the soda, My husband gobbled up last nights batch! The water is boiling. I was a bit confused with the amount of flour in this recipe. Normally you can put just over double the flour to water right? I was only able to get 3.5c flour in. I think I will try boiling them on each side longer too. Might turn out tasting more like bagels! :D My bother said the recipe he uses is strothottedotcom with the recipe link in the side bar w/o soda though.

You know I just remembered that when I was baking them I told my sister I thought I'd killed all the yeast 'cause I had the impression that the water was still too hot. Maybe that's why the dough ended up a bit tough. And another question: the pretzels Laura bakes are white inside and mine were yeallow... like really yellow :P
@dansan AHahah, I know about the yellow and that confused me too! The 1st time I made them they were more yellow then the second. I have no idea really how that happened? Probably the dough was tough because of the amount of flour, that is my guess anyway. The amount of flour seemed a lot for only 1.5 cups of water.

@EvelynGB I just checked the recipe and it has baking soda but only 5 tsp. In the meanwhile I noticed that there is something underlined in the recipe which is the importance of using a non-aluminum roastpan to boil the pretzels and I used a aluminum one! Could it have happened some sort of chemical reaction with the aluminum and baking soda? I know it is not impossible! o_o
if you want the dough to rise faster incase you don't have time, you can put the bowl of dough into another bowl that has warm to hot water. Not in really hot water but just really warm. It speeds up the processes. helped me out a lot of times.
@navya0108 Unsalted. Whenever you are cooking or reading a recipe, it almost always (99.99%) unsalted. Rarely you will even find one recipe that specifies to use salted. So always assume unsalted!
I just tried the recipe the flavor of the dough was good and really soft. HOWEVER the bottom and outside of the pretzel was extremely bitter. Any idea what would cause that? I left them in boiling baking soda for 30 seconds like said and did the egg wash. Exactly like in the written recipe on the website.

This is exactly how to make bagels too. Instead of shaping them into pretzels, just shapes them into circles. Before you boil them in plain water for 1 min each side, just let it rise for another 20 minutes. Rub bagels with water, sprinkle with poppyseeds etc, and then bake in oven for 12 minutes and voila! Delicious bagels

Sesame seeds are also great on the pretzel. They come out nice and crunchy. Great if you dont like your pretzels plain. I also add a bunch of fresh garlic in mine. Great if you love garlic.
Cooking just isnt that hard. Probably the most important skill a person can know. You eat 3 meals per day every day of your life. Problem with America is that our cooking skills are lacking to the point where nobody cooks at home anymore.
One packet of yeast is normally 1 tablespoon... and normally in one packet its 11grams and maybe some places is 14-15grams...generally its 1 tablespoon :)

@dansan Might have used to much baking soda. you can also just bake them, won't have the same consistency but it really is just a bread recipe.

This is exactly how to make bagels too. Instead of shaping them into pretzels, just shapes them into circles. Before you boil them in plain water for 1 min each side, just let it rise for another 20 minutes. Rub bagels with water, sprinkle with poppyseeds etc, and then bake in oven for 12 minutes and voila! Delicious bagels

Sesame seeds are also great on the pretzel. They come out nice and crunchy. Great if you dont like your pretzels plain. I also add a bunch of fresh garlic in mine. Great if you love garlic.

One packet of yeast is normally 1 tablespoon... and normally in one packet its 11grams and maybe some places is 14-15grams...generally its 1 tablespoon :)

Made these today. They are great. Hubby says they are better then the stadium ones he pays $7 for. After he ate two I told him he owed me $14! Smolensk. Thnx Laura, will for sure be making these again. I followed recipe exactly and turn out just like your picture!
