How long should it take with an electric hand mixer to get to a very stiff peak as it calls for in my cinnamon bread recipe? (I do not have a whisk attachment, so I too will have to use a regular attachment. Just curious as to how long it takes, because i have tried this three times and i can't seem to get it right. I even got up to ten minutes and it still wasn't hard enough. I followed all the tips people give (room temp eggs etc) and it still didn't work. Any advice?

What if your mixer does NOT have the whisk attachment? Can you use the regular beaters, or should you use a manual whisk?

@Jibjub80 Ive read that its not good to whip egg whites when its humid because they wont reach the full peaks with all the water in the air. I have never tested this out myself so i couldnt give you a straight answer; but if you are making them inside and its cool and dry i see no reason not to. :)

actually the stiff peaks egg whites should look glossy and stiff; not foamy like the video projected. but the soft peaks stage looks good.

Yeah, this video wasn't very clear or explicit. I have never attempted to beat egg whites. I can seldom even separate them properly. I always end up breaking the yolk.

speed and then increase.
