it varies by game. in this one they are calling them humans. it may be because this is arguably before hylians or even "hyrule". the definition of hylians is varied too, since they have characteristics of elves and humans. but since zelda doesn't strictly follow tolkien logic, i would say they are humans with pointy ears who occasionally use magic. =P

there is no solid evidence of difference between hylians and humans in zelda.
