It's funny, I once lived in a place with lots of vegans (I was one too) and many had this really strange need and way to lecture and criticize other people. Are they the new Bible Thumpers?

  • Lori, I hope you stopped using the agave nectar. It's no better than High Fructose Corn Syrup. It's made using the same process and it contains even more fructose than HFCS! A healthier alternative is stevia or maple syrup. Also, mesquite powder works when you need to add granulated sugar to a recipe.

  • No problem. :-) There is no such thing as "raw" agave because in order to make the agave syrup, the agave sap has to be heated to very high temperatures to extract the syrup. It's the same way as making high fructose corn syrup from corn. In fact, the amount of fructose in agave syrup is higher than HFCS! Don't believe the marketing hype with the low glycemic index. I recommend using dates, stevia or raw honey (unheated!) to sweeten stuff up.

  • TOTALLY! I learned about agave AFTER making this video! I no longer use it at all. I prefer stevia, honey, dates, etc!

  • I just posted a comment above.. I didn't research it yet, but I'd think the main concern with any sweetener is the low glycemic index.. that way it doesn't shock your system with too much sugar at one time?

  • I had no clue? I use Agave Nectar. I didn't even bother looking into it further.. I simply felt that a plant-based sweetener was a natural/healthy form of sweet heaven. I'll look into this now! : )

  • Agave is plant-based and if you don't care to be on a high raw diet or not concerned with spikes in your blood sugar, agave syrup is fine to use. However, it's not the healthiest sweetener or the lowest glycemic one. I use KAI stevia and it's fantastic! Zero calories, no aftertaste and blend well into anything.

  • Wow...1 cup of coconut oil + 2 cups of coconut flesh...that is one high fat desert. Ok for an occasional indulgence I guess.

  • I've just made some and left a lot in my vitamix to taste it right away. That was REALLY good! I bought my vitamix quite a while ago and I'm so happy to find recipes to use it more often (I'm not a raw foodist but decided to stick to this diet for fews weeks to detox) Thank you!!

  • LOL.. that is hilarous! We have become such an "instant" society, that a couple minutes is "burdensome". I got a good giggle out of that. I know what you mean though.

    On the other hand, this was one of my first videos and I was totally clueless on making videos. I have been learning to do some edting. This should really help my videos. I'll make you proud...:)

  • Thanks for seeing the humour in my comment. I was interested in the recipe, but our society is not so instant that we enjoy watching someone poking the blender and finding fascination in that.

    We would lose interest in cooking shows for the same reason if we had to wait for the real time oven baking too. ;)

    I thought it was going to be very yucky when you said olive oil and then re-read your intro on side bar.

    Sounds intriguing but we don't get fresh coconut products up here.

  • I made this yesterday for my birthday cake. I was heavenly!! I added too much water, but I put it in the freezer for a couple hours right after I made it so when we ate it, it had the consistency of ice cream! Everyone loved it, we all had seconds. I can easily see how half of yours could disappear before it even made it to the potluck! Thanks for posting the recipe!

  • LOL... I was thinking "this is taking forever!" I have made it so much faster in the past. Yeah, pretty got facial expression, huh!

  • 2 things could have happened. #1 too much liquid was added. Sometimes I don't add any water if I can get away with it. #2 Not enough coconut oil. #3 The coconuts you used may not have been fresh. If they have a purple tint to them...then pass. Those ones never give me fluffy firm cream. Those are the 3 factors for setting up. If it doesn't turn out, you can toss a portion of the pie into the blender and make a shake. Let me know what you end up doing.

  • We just made your corn salad and had it for lunch. We have home grown corn, tomatoes, jalapenos, cucumbers, cilantro....this was fantastic. I think I will try zucchini next time in place of cucumbers. Thanks for the recipe!!
