Good video Manivan and I like the fact that you said Thai/Lao or Lao/Thai sticky rice. Since over 30 million Lao people (Isane people. You can't say Lao because of persecution by the Thai government in the 50's.) HukPhaeng- Ubonraj
My mother cooks glutinous rice in a similar way. I never got the hang of this. I prepare it in an electrical food steamer but sometimes the rice doesn't seem to get sticky enough. It seems to be too much soaked with water. Maybe I have to add less water...
Because of your tutorial videos Manivan, I'm not so much of a disgrace to my Laotian heritage considering I'm Asian American. Now teach me how to make Duck Blood!
info for people who care.... sticky rice is originated in laos. why she say northern thailand too is cause northern thailand used to be part of laos. the esan people. real thai and original thai parts dont eat sticky rice.
If you oversteam the rice, it will stick to the bamboo basket. For black sticky rice, you must mix with white sticky rice and soak longer before cooking. More info in my website.
I ate this last weekend for the first time ever. I went camping with a friend and he had a Vietnamese friend who made it. It was so good!! I recommend everyone trynig it.
I used my basket for the first time and it worked well, but I found that because of the tight weave I had to cook the rice a little longer. Also, some of the color of the bamboo came off on the rice even though I washed it first. I guess that is normal as it steams, but if there is any special way to break in a new bamboo cooker, that might be good to mention.
Make sure you soak the rice for a minimum of 4 hours before steaming for 20 minutes, then flip and steam for another 5 minutes. Soaking the rice eliminates the need to cook longer. No need to break in a bamboo steamer. The yellow stain is natural and will ilimate over time. Do not use soap, just rinse the bamboo steamer.
I tried this rice (with a mashed-up julienned cucumber/garlic/hot pepper salad when I visited a place called Nong Khai near Laos 19 years ago. It was the best thing I had ever tasted in my life and I've never forgotten it.Thanks for this excellent video...now I can try it at home!

Thanks a lot for this video. My sticky rice has been coming out hard; I think it's because I add too much water.

is this the same rice used in bah chang or rice dumpling??
rainbowbutterfly14 4 years ago
I'm not sure but make the label on the package should read "glutinous" to know you have sticky rice.

I eat this all the time. We make a little ball of rice with our hands (when done of course) and then dip into this wonderful sauce.
Sauce:
3 tbsp of soy sauce
1 tsp of garlic (minced really good or use powdered)
1 tsp onion powder
1 really HOT pepper of your choice. (minced fine)
There ya go...incredible!

Make sure you have the correct rice. The label of the package should say "glutinous". Thai jasmine rice is not sticky rice.
larprom 4 years ago
Yes, I used to make this without the cooker. I have the right rice. It works fine, thanks. I like your videos, too. Well done!

Go to a Thai, Lao, Viet, or Cambodian supermarket to get sticky rice. The rice label should read "glutinous".

Look for a Thai or Lao store in your town or you can order them on line at some sites.
