That looks SOOO good! I was wondering if you've ever thought of toasting the coconut before, cause it seems like it would add ANOTHER layer of flavor lol. Just wondering :) But I'm am MOST DEFINENTLY going to try this!

Its optional, but most people add 6oz cream cheese to the pudding mixture. It gives it a nice frosting like texture while all the while, the taste of the pudding remains.

i wonder what it would taste like if it was done using fat free and/or low fat ingredients? You could substitute half the eggs and just use egg whites and use plain yogurt instead of the pudding... Mmm sounds really good!

You can use white cake (it uses egg whites) and everything else can be low fat! i bet it would taste great!!

Yeah! Thanks so much for sharing! I remember eating this cake when I was a kid. We called it Pawpaw's cake because it was his favorite. I haven't had it in years and didn't know the recipe. I plan to make it real soon. Happy Birthday to your husband by the way.
