Cant remember a lot about the smoking process. I do remember cleaning a hog or two in my time. Wow, nothing like fresh homemade crackling or pork rinds fresh out of the old black pot out side.. This is a great video. It really makes us appreciate how hard our ancestors had to work to survive. To think they settled in the mountains of Ky. and survived everything that nature threw at them. My folks came from Indian Creek,Ky and Corbin. This is wonderful to see. Thanks
Good video. That's how we did it in central Minnesota every 3rd week of October as far back as I remember...except for the tractor and chainsaw part. Our smoke house had a fire pit in the middle of the floor and we used oak or apple saw dust that we kept damp...made a heck of a smoke. Kept it going for about 3 days. After that we just let the meat hang and we took what we wanted when we wanted it. Usually lasted to Easter. Always saved the best ham for that day.
We need more of this old knowledge back, hard times are coming, get ready people! All it takes is one EMP or a CME attack and it's all over for modern electric technology. No fridge, no lights, nothing electrical will work anymore for possibly months or even years. Even your car if it's fuel injected with an on-board computer will no longer run. Have an old car stored away, stock up, and prepare for the worst but pray for the best, one day you might be glad you did. Over and out!

Im from Louisiana and grew up on a farm..hadnt seen anyone smoke a hog the old way since I was in my teens..if we dont talk to the older folks and get the info its going to be lost folks..Ive learned so much from my dad and my gramps on "how we did this" or "that"..untold value
Thanks for hunting this man down. He is a wealth of soon to be lost knowledge and art. I live in SC and this is the way my grandparents lived everyday. It is hard to believe that this knowledge has almost completely vanished from here in just a short time. I hope you can do some more YT videos with this man. Awesome job!!
i'm from southwest Va, and my family has taught me how to do this. the meat taste great, but I dont think I have ever had a ham to hang that long 7 years...lol.. we eat ours within the first year, cant seem to keep any smoked meat around that long, just to darn good..
@clodester Pouring boiling water on a pig to help remove the hair has been the preferred method for hundreds of years, probably longer. Due to the small amount of water used and the huge surface area of the pig coupled with the thickness of the hide and fat it has no affect on the pig other than to soften the hair bristles.
