the Choco Rolls ingredients are confused me. in your site wrote 300 g biscuit, 200 g chocolate. in video you told 130 g biscuit, 140 g chocolate. and under the video you wrote 300g biscuit, and 300 g chocolate. please tell me how much I need.
1. for the egg yolks you can, just be sure to temper them so they don't scramble (Mix a bit of the batter into the egg yolks, then add to mixture, so the temperature is raised slightly) The heat already in the cake should cook it though. As for the egg whites I wouldn't add them while over the double boiler, as it might deflate the fluffiness. if you are really worried, try whipping them over a double boiler before you refrigerate them (low heat of course) otherwise follow the recipe

I have a few questions here:-
1.Can we use a chocolate that is not 70% cacao
2.Did you use salted butter or unsalted butter?

Yes, you can use less rich chocolate, but the taste will be more poor in chocolate (then you can add more cacao powder).
I suggest you to use unsalted butter for this chocolate cake.
