2. I believe you should never disCard your egg whites! You can put freeze them in ice cube trays or Tupperware for later use in egg-white omelets, soufflés, meringues, white cake (my fav!), macarons, etc.
3. If you're not a fan of sour cream, you can make whipped cream much easier by just whipping up heavy cream, powdered sugar, and vanilla extract.

Every banana pudding recipe I find online calls for sour cream. My mother never put sour cream in her banana pudding. Matter of fact, I don't remember any of my friends moms putting sour cream in their banana pudding either.
I never saw this version of banana pudding. My mother always did the same thing except I want to say she baked her in some kind of way. I also remember her keeping the egg whites and whipping them up with I guess sugar to spread across the top and it would cook. Then when she got it out it would be a brown color on top. This looks good too. I will have to try it.

banana pudding is to the south what cheese cake is to New York...i make my pudding a lttle differently...I place all my cookies and bananas in the serving bowl then cook my milk , sugar, vanella, butter and flour until it thickens and then take it off the heat and then add my egg yolks (slowly so not make scrambled eggs)...then i pour it over the bananas and cookies while the pudding is still hot......use the whites for merengue
