The chicken, while tender, had a weird stringy texture. Where did I go wrong? Was it subpar meat or did I undercook it?
@EmpireX1020 no you didnt do anything wronge, it was the chicken. older chickens have stringy meat, you want the younger chickens with tender meat.. i dont know how you tell that, ( i guess buy small chickens) but older chickens have stringy meat, usually used for stews/soups only

@supertrex2 You can use no butter at all....just cook it with extra virgin olive oil...substitute butter with starch to make a creamy sauce....use 1/3 a shot glass of corn starch....mix with just enough water to liquify all the corn starch..(Very little) and pour into skillet about 2 min before pulling the meal off the stove. You will have everything Marsala has to give along with a creamy sauce.

Hi, I cooked it already. I forgot to ask you about the wine because I can't use alcohol (not allowed in Islam n I'm Muslim), I replace it with chicken stock and I don't know if that affects the dish because the taste is quite ordinary (my husband make no comments, it'll be different if smth different). We finished the whole plate but I expected more than that ^^. But of course I'll continue with your cooking videos. They are very helpful to me :)

@blueorchid84 I'd suggest replacing the marsala wine with some good balsamic vinegar diluted with chicken broth, it will taste very different than chicken marsala, but much better than with just chicken stock!
@blueorchid84 : Hi, I saw your comment about not being allowed to use wine. well in that case I have a few tips for you that would work: first aside from the alcohol in marsala, it is a very sweet wine with a smoky earthy flavor. as a substitute you can mix natural grape juice(3/4) and apple cider 1/4 and use that instead of marsala. although it is not quite the same but it kinda resembles the flavor at the end(chicken marsala is a sweet and savory dish).
@blueorchid84 2nd tip is: use extra light olive oil for braising the chicken and when your food is ready turn off the heat and then add the butter. wait a minute until it melts down, give it a stir and it is ready to serve. enjoy.

People need to stop worrying about the butter, use more olive oil or just reduce the butter if you're terrified of fat. It's not like you have to eat it all the time or in large quantities. I tried this recipe just now and it was pretty good, i had a hard time getting the right amounts of seasoning so it wasn't as seasoned as I liked it. also, in your video the sauce left over is way more thick than what I ended up with... should I use less of everything if I'm only cooking with 2 pieces rather than 4?

I do feel if you use a good imported Marsala wine from Marsala, Italiy the end result is a much more richer and sweeter sauce. I use fresh oregano, and fresh ground pepper. Personally I like angel hair instead of rice....but to each thier own. My daughter likes to throw in a teaspoon of capers at the end....It just adds a wonderful palate to the dish. Not very traditional but none-the-less very tasty!

what brand of wines to buy. I have been making this using cooking wine and they came out good but I believe it will come out better with good quality real wine.
@pinaygemstone Any good-quality dry marsala will be nice in this recipe. Fine Marsala has 17% alcohol, matured for over one year. Superiore Marsala, superiore riserva and vergine soleras all have 20% Marsala. They're aged for over 2, 4 and 5 years.
I made this last night and it was DELICIOUS. I Followed the recipe exactly, except I added a few shallots, 2 cloves of garlic minced, and a bit more mushrooms then called for(i LOVE em). In order to fit all the mushrooms in the pan with the chicken, i precooked them a little to reduce their bulk. I added the garlic and shallots just before the chicken was done browning.

I make this dish all the time, and was suprised that you did not ignite and flambe. i am trying this way tonight... also what type of sherry (cream/dry/med dry)?
We can't thank you enough for this recipe. Not only was it incredibly easy, but ABSOLUTELY delicious. I tripled this recipe by cooking this recipe 3 separate times (transporting chicken, mushrooms & sauce each time to a bowl I had set aside with a top to keep warm). Once I had all 3 cooked, I removed the chicken to a serving bowl and did place all the liquid (and mushrooms) back into the pan to thick up just slightly with a small amount of flour. I then poured it back over top of the chicken.
add some veal reduction, brown sugar just a pinch and use cooking sherry wine it will be 70% better and for me taste better with thyme instead of oregano, over pasta or with mashed potatoes...

think about how much he would you if he was only making 1 serving size. about 1/4th of that butter would be used.

It definitely costs more than $4.93 to make. $2-3 for the chicken. $1-2 for the mushrooms. The sherry and marsala are about $6 together.

We can't thank you enough for this recipe. Not only was it incredibly easy, but ABSOLUTELY delicious. I tripled this recipe by cooking this recipe 3 separate times (transporting chicken, mushrooms & sauce each time to a bowl I had set aside with a top to keep warm). Once I had all 3 cooked, I removed the chicken to a serving bowl and did place all the liquid (and mushrooms) back into the pan to thick up just slightly with a small amount of flour. I then poured it back over top of the chicken.

add some veal reduction, brown sugar just a pinch and use cooking sherry wine it will be 70% better and for me taste better with thyme instead of oregano, over pasta or with mashed potatoes...
