  • chef im from the philippines and i wanted to ask if was is a good alternative for sherry and marsala wine??

  • @DSHAPify Sorry, I'm not sure what your question is. Are you wondering if you can use sherry instead of marsala? If so, I wouldn't recommend it since marsala is the key ingredient in this dish. Hope you enjoy it!

  • I always enjoy your videos. Very informative.

  • thank you for this!! I feel like a chef now :D

  • So the sauce and mushrooms were really good. The problem was the chicken breast. I just bought them tonight, then sliced them so they were about 1/4" thick, then pounded out the areas that were still a little thick. Dredged them in flour, salt, and pepper, then browned them for about 3 minutes on either side, then finished cooking in the sauce for about 15 minutes. The chicken, while tender, had a weird stringy texture. Where did I go wrong? Was it subpar meat or did I undercook it?

  • @EmpireX1020

Hello. Was the chicken still pinkish?

  • @EmpireX1020 no you didnt do anything wronge, it was the chicken. older chickens have stringy meat, you want the younger chickens with tender meat.. i dont know how you tell that, ( i guess buy small chickens) but older chickens have stringy meat, usually used for stews/soups only

  • Lo probaré, tiene buena pinta!

  • is marsala drinking or cooking wine

  • @nuttybar9 It is used for both.

  • This recipe is awesome, have made it countless times and my family loves. Thanks Chef

  • yummm, love it!! xoxo

  • @lovelyladycakes Thanks!

  • I want to make it but I don't have wine

  • @Ugandangirl It's the most important ingredient — that's the marsala! :)

  • Looks good enough to eat. Enjoyed the video.

  • @jngwatson Thank you!

  • Im under 21, and can't buy wine, is there any substitute i can use?

  • @AdVictoriam1 Unfortunately, no. The centerpiece of this dish is the wine.

  • damn im never gonna order chicken marsala anymore. too much butetr for me

  • @supertrex2 You can use no butter at all....just cook it with extra virgin olive oil...substitute butter with starch to make a creamy sauce....use 1/3 a shot glass of corn starch....mix with just enough water to liquify all the corn starch..(Very little) and pour into skillet about 2 min before pulling the meal off the stove. You will have everything Marsala has to give along with a creamy sauce.

  • Cant wait to see the expression on my gf face XD

  • @poisoncupcake74

    Thanks for the comment!

  • good instructional video, except when he said half stick of butter; it looked more like a third.

  • @Lhouie27 Um, no. This is from Apple iMovie.

  • Looks great...have always wanted to make chicken marsala at home. I am finally going to do it. Thanks!

  • You guys are awesome!!!! Tks for sharing all the cooking recipes

  • @vickymejiaq Thanks!

  • could I get drunk from the wine :)?

  • @undeny No. It's safe for kids to eat.

  • @undeny sure. do like julia childs did: one cup of wine for the dish, one cup for the chef. Every dish, no matter how poorly prepared, will taste better! bon appetit!

  • Loved the Chef John music cameo!

    thanks!

  • @luckypianocat1 Actually this is just a jingle from Apple iMovie. Lots of people use it. :)

  • That was a lot of butter!!!!!!!!!!!!

  • @reloader248

    Emmm..... butter.

  • @reloader248 its not ALOT of butter, then you think about all the chicken hes using, there needs to be enough to shallow fry the chicken.

think about how much he would you if he was only making 1 serving size. about 1/4th of that butter would be used.

  • thanks for the recipe! love it much!

  • @nnej17 Thanks for the comment! You are so welcome!

  • Sorry if this was asked and answered already, but on what heat level do you set it to seamier ? Thanks! =) Great videos btw. Saw the steak temperature tips first from your videos hahah nice one... =)

  • I LOVEEEEE THIS VIDEO! <3 so incredibly easy to make : )!

  • Will i get drunk from the wine?

  • @deadmeu No! :)

  • It came out great for me. Thanks!

  • @univgurl You're welcome! Glad you liked it.

  • how can someone eat chicken that hasn't been washed in vinegar or lime water.... and not even seasoned!!???? weird ppl!!

  • I made this tonight, it was delicious !!!

  • No garlic, onions or parmesan cheese?

  • @vanscoyoc

Ha ha! No, but feel free to add it to your dish!

  • Hi, I cooked it already. I forgot to ask you about the wine because I can't use alcohol (not allowed in Islam n I'm Muslim), I replace it with chicken stock and I don't know if that affects the dish because the taste is quite ordinary (my husband make no comments, it'll be different if smth different). We finished the whole plate but I expected more than that ^^. But of course I'll continue with your cooking videos. They are very helpful to me :)

  • @blueorchid84 Thank you. The marsala is actually the most important part of the dish, so there are no substitutes. It is the marsala that gives the dish its flavor. Thank you for your feedback! Cheers, Jason

  • @blueorchid84 I'd suggest replacing the marsala wine with some good balsamic vinegar diluted with chicken broth, it will taste very different than chicken marsala, but much better than with just chicken stock!

  • @blueorchid84 : Hi, I saw your comment about not being allowed to use wine. well in that case I have a few tips for you that would work: first aside from the alcohol in marsala, it is a very sweet wine with a smoky earthy flavor. as a substitute you can mix natural grape juice(3/4) and apple cider 1/4 and use that instead of marsala. although it is not quite the same but it kinda resembles the flavor at the end(chicken marsala is a sweet and savory dish).

  • @blueorchid84 2nd tip is: use extra light olive oil for braising the chicken and when your food is ready turn off the heat and then add the butter. wait a minute until it melts down, give it a stir and it is ready to serve. enjoy.

  • Ever since I saw this like a year ago, we've made this quite a bit, it's really good and easy to prepare. People need to stop worrying about the butter, use more olive oil or just reduce the butter if you're terrified of fat. It's not like you have to eat it all the time or in large quantities. Fat in moderation is not bad for you .

  • @callahan9119 Good point. And I'm so glad you like the recipe!

  • is there a healthy alternative for butter? thanks!

  • @leyna

Sure, you can use any butter alternative that you like.

  • @leyna do not cook with "tub margarine". You think you're doing yourself a health favor, but under relatively high heat, it makes a toxin. This is not nonsense, you can find it if you research a little . Butter is not bad for you...you don't have to eat this every day! best wishes.

  • looks yummy i'ma try it tongiht!

  • From the video I think it's quite good and I'll make it next weeks. I'll tell you if I like it :)

  • @blueorchid84

Cool! Hope you enjoy. Let us know!

  • i was looking for a good recipe to eat the chicken as a clean source of protein, sounded good until all the oil and butter :(

  • @alexandrecreep

    Sorry.... :(

  • @ChefTips NO CHEF! never apologize for butter, NEVERRRRR!!!

  • This is a great video, thank you.

  • It definitely costs more than $4.93 to make. $2-3 for the chicken. $1-2 for the mushrooms. The sherry and marsala are about $6 together.

  • @bryanhamade and $5 for the ridiculous amount of plastic wrap that he uses in this video :-P

  • @AlcoholLevel

The 3000 foot roll of plastic wrap cost me fourteen US dollars. I used about 6 feet in the video. DO THE MATH and then get back to me... :-P

  • @bryanhamade

I am talking about the plate cost.

  • @bryanhamade thats $4.93 per plate, not for the whole meal

  • Truly,

everyone in America should learn this recipe and should serve it regularly until their roommates, partner, or family get sick of it. So delicious, and yet so simple.

  • @ReliableInsider Thanks!

  • This video is making me extremely hungry. Yum!

  • I tried this recipe just now and it was pretty good, i had a hard time getting the right amounts of seasoning so it wasn't as seasoned as I liked it. also, in your video the sauce left over is way more thick than what I ended up with... should I use less of everything if I'm only cooking with 2 pieces rather than 4?

  • @letspretendxc0re I would keep the sauce in the same proportions, even if you are making two chicken breasts.

  • I am making this right now, thanks for the recipe! My family will no doubt enjoy this! But instead of several pieces of chicken I used one breast and sliced it thin, then pounded it out. Hope it works. Its all I thawed from the freezer this morning, way before seeing this video.

  • @MsBelleSinger How did it turn out? Hope you all enjoyed the recipe!

  • Very nice! And easy, thank you! :))

  • @candiikillz You're welcome!

  • I do feel if you use a good imported Marsala wine from Marsala, Italiy the end result is a much more richer and sweeter sauce. I use fresh oregano, and fresh ground pepper. Personally I like angel hair instead of rice....but to each thier own. My daughter likes to throw in a teaspoon of capers at the end....It just adds a wonderful palate to the dish. Not very traditional but none-the-less very tasty!

  • @wickedanddivine Nice tips. Thanks!

  • Chef, Just one tip..

Cud you taste the food after cookings..Somehow, this creates an added effect of the cooking being really good.

  • @hansalas

Thanks. I do taste the end results in most of my videos. I should have done so with this one.

  • That looks DELICIOUS! I think I'm going to try this and add grilled onions, too. For the food purists, I realize that might make it something other than a classic Marsala, but I think it would be a yummy addition.

  • @wifey231 Feel free to make it your own! Hope you enjoy it. :) Jason

  • my husband and i are not fans of mushrooms at all, what would you suggest using in its place??

  • @britsunshine1 Classic Chicken Marsala is made with mushrooms. It's really essential to the dish.

  • Are those wines purchasable if you're under 21?

  • Great recipe Jason. can we use White wine and red wine instead of Marsala wine or sherry wine? will it work?

please could you upload some video about making the chicken wings with the shortest preparing time to serve at restaurant?

  • @gunsmokevarkaus Good question. For chicken marsala, you must use marsala wine. I'll prepare a coq au vin in the future, which uses red wine.

  • God you're sexy. Probably because whenever I make your recipes they're so amazing.

  • This dish is ways too heavy. The amount of butter is too much.

  • @mwalter Then use less butter.

  • Ahhhh ..... A man that cooks.... Everything looks yummy ! Keep 'em coming.....

  • Your video made me so hungry! :D

I wish I can just grab it out of the computer and eat it

  • After you turned the chicken for the first time, and covered the pan, did you lower the heat or keep it the same?

  • @FSTA54 Lower it a little bit.

  • Great recipe. I make this along with penne pasta and homeade tomato sauce, with grilled asparagus on the side. My family loves it, thanks chef Jason

  • @esb818 Thanks! Sounds like a nice meal. I'm glad you enjoy the recipe! Cheers, Jason

  • "Masala" not marsala..

  • @deepakjindal070 Masala is a different dish of Indian origin. This is an Italian marsala wine recipe.

  • @deepakjindal070 haha maybe you should watch the video before you comment.

  • i like chicken and wine!

  • Lol I feel like I'm watching FoodWishes with the music XD

  • @Shadow194 The music actually belongs to Apple Computer. It's a standard jingle that comes with iMovie.

  • @ChefTips Oh I know :P, but every video he uses that jingle.

  • lol looks easy but meh im one of those who just watches and orders =P

  • Great vid.

Question, if I dont get the Marsala wine or the sherry wine, what other type of wine can I use?

    Love this vid

  • @cprobosteuribe Thanks! You really should use marsala wine to get the proper flavor for chicken marsala. Otherwise it will turn into an entirely different recipe. Enjoy!

  • @ChefTips Thank you for your answer, Hope to find some marsala wine.

    Thank you

  • Hi I have a question, when you season the chickens, do you let it sit or no?

  • @aSweetSurprise You can let it sit a few minutes.

  • Since I am under 21, can I legally eat this? LOL

  • @goldenshots Of course you can!

  • wow delicious

  • what brand of wines to buy. I have been making this using cooking wine and they came out good but I believe it will come out better with good quality real wine.

  • @pinaygemstone Any good-quality dry marsala will be nice in this recipe. Fine Marsala has 17% alcohol, matured for over one year. Superiore Marsala, superiore riserva and vergine soleras all have 20% Marsala. They're aged for over 2, 4 and 5 years.

  • I made this last night and it was DELICIOUS. I Followed the recipe exactly, except I added a few shallots, 2 cloves of garlic minced, and a bit more mushrooms then called for(i LOVE em). In order to fit all the mushrooms in the pan with the chicken, i precooked them a little to reduce their bulk. I added the garlic and shallots just before the chicken was done browning.

This is one of my new favorites. Thank you so much ChefTips.

  • @The4LA2Baker0 So great to hear you enjoyed it! Thanks so much for the kind response. More videos to come!

  • looks tastey and beautiful thx for sharing

  • @TheAutumnExpresso You're welcome! Thanks!

  • @blactcar Thank you so much. You are very kind!

  • I make this dish all the time, and was suprised that you did not ignite and flambe. i am trying this way tonight... also what type of sherry (cream/dry/med dry)?

  • @clearlyoleary Hi there. I used a dry sherry.

  • hey chef, what's the name of the saxophone song at the end? thanks!

  • @xxh3llfir3xx

Hello. I can't remember the name but it is a song off the imovie program.

  • Very good video...

  • @UserIsAnFBIAgent Thanks! :)

  • huh? I thought you're making Indian Style Marsala Chicken when I first saw your title.

  • @eddyyong2 If it was Indian, it would be Masala, not Marsala.

  • This looks great, I'll have to try this one sometime.

  • wow that was amazing, m cooking that friday... ts my 21 I can buy the wine myself!

  • @n4di4133 Cool! Hope you enjoy it!

  • all your dishes look delicious! I bet your family is happy, haha. Nothing like having a great cook in the family!

  • Looks delicious.

  • We can't thank you enough for this recipe. Not only was it incredibly easy, but ABSOLUTELY delicious. I tripled this recipe by cooking this recipe 3 separate times (transporting chicken, mushrooms & sauce each time to a bowl I had set aside with a top to keep warm). Once I had all 3 cooked, I removed the chicken to a serving bowl and did place all the liquid (and mushrooms) back into the pan to thick up just slightly with a small amount of flour. I then poured it back over top of the chicken.

  • @cakedecoratingmomma

Glad you enjoy the recipe! Thanks so much for taking the time and leaving the comment!

    Cheers,

    Jason

  • @1uzbek Thanks! You are too kind.

  • add some veal reduction, brown sugar just a pinch and use cooking sherry wine it will be 70% better and for me taste better with thyme instead of oregano, over pasta or with mashed potatoes...

  • @rafael640

Sounds good, but I don't know too many home cooks who have veal reduction in their kitchen.

    Thanks for commenting! =]

  • is thier an alternative for the wine. Can i use something else other then wine?

  • @Mbibi4eva
