It's probably best to assume that the farm animals are intelligent in the Babe sense of the word (I.E. Sentient, but unable to effectively communicate this to their owners), which would make sense as in other examples we've seen of clearly sentient pet/farm animals (such as the time-comprehending Angel Bunny), the other animals have been unable to talk to the ponies. If AJ and AB understood what that sheep said, it would be the first such example in the show and it's more likely...
