I added the camden tablet to the juice just after pressing. I waited overnight to pitch the yeast. The camden kills all the bugs in the juice overnight. By the time the yeast was added the next morning, it's 'neutralized' and the yeast can do its thing.
After pressing the juice and before adding the yeast, adding the camdem tablet to the juice kills any wild yeast (or other 'bugs') in the juice. After giving the tablet overnight to do its work, add the brewing/champagne yeast.
If the cider has potassium sorbate in it, will it fement with Red start champagne yeast?

How did the cider turn out ? Im currently brewing a 5L demijon and am wondering when to bottle it or due a 2nd fermintation

I ended up doing a few months in the primary fermentor, then moved it to a keg for another couple of months to clear. From there I bottled it.
I think the thing to be really cautious about is oxidation - you'll get apple cider vinegar. Keep it away from 'air' as much as possible.
