It's not about hitting the notes, it's about WHEN you hit the notes, and the word at the botton of the screen: Missed, Good, Awsome, Perfect

Missed = 0 % Accurate

Good = 25 % Accurate

Awsome = 50 % Accurate

Perfect = 100 % Accurate

So the more 100 % Accurate you have, the higher the "Accuracy" stat, and when that's 92 - 94 %, you'll get an A*, when it is 94-98 you'll get an A**, and when its 99 of 100 %, you'll get an A*** ;)
