  • What a misrepresentation of tum som!! Absolutely horrifying! And just to clarify those who are not in the know, papaya salad originated from Laos and the only reason why you see it eaten in Thailand is because people of Northeastern Thailand is part Lao - they eat Lao food, speak Lao, and follow Lao traditions. And I agree with most of the comments here, if you want to taste this wonderful dish, DO NOT follow this recipe. This is all sorts of wrong!

  • I love Somtam especially Somtam poo-prarah and somtam Thai....I can eat those everyday ;) but in Thai's style not american's style...oh and U guys have to try Tam Mamueng (Mango Somtam) the best dish ever!I recommend! So proud to be Thai...I can eat good food everyday of my life ;)

    If using cucumber, also known as "Tum Tang"

    If using sour green mango called "Tum Mamoung"

    It can also be used.

  • Accidently used red papaya...... not a good outcome ol. I have never eaten this dish. I want to try it so bad. WIll be getting GREEn papaya next time as I have all ingred aside from palm sugar. I cannot find that ANYwhere here in Maine. Will have to order inline.

    If you can't find palm surgar you can use brown sugar or granulated white sugar.

  • I much prefer the Thai version over the Vietnamese one. The Viet one is too simple although it does use a unique sauce.

    Dried shrimp is not easy to find in the west. Also a lot of westerners object to the smell.

    So I modified the recipe a bit so that westerners can enjoy it.

  • rutabaga is a good substitute for green papaya. those seem to be more readily available in your grocery stores.

  • I tried this, but didn't have access to green papaya. So I used radishes. It was a decent substitute. I through in chunks of cooked papaya, and got the tangy taste with lime.

    Again not ideal, but I love this recipe.

    Try this with firm green mango. If your green mango is sour you don't have to add lime juice

  • Green papaya is difficult to find in Adelaide, South Australia. My mother makes this salad with carrots. I must find her one of those shredder devices. She uses a knife to chop the surface and then a normal peeler to peel it into uneven strips. YUM.

  • We also eat green papaya in Costa Rica and Nicaragua, it's called Picadillo de Papaya, :) that's the beauty of having the same ingredients but with a completely different culture. I tryed that salad once and it's great!!

  • I really miss Lao food. I tried to make tum mak thang (I know, try to spell in English is weird) but it's rather hard to find papaya here in Florida so I use cucumbers instead. The problem is finding padaek is impossible and even shrimp paste is hard to find. So of course, it never turns out right without that last ingredient. If I still lived in Maryland it'd be easier to get them.

  • I just love this show! I just tried this salad at home yesterday! It was yummy! It tastes somehow spicy, salty, sour and sweet all at once! It was just a blending wecation for the taste buggs, including the little crunchyness! I served it as a side dish with wermicelli and spicy chicken. Serioucly!, It is worth trying!

  • Wow, I need to get that vegetable shredder, this Thai salad is the most freshest and healthiest salad I ever know, I like to pit out the pulp in the tomatoes and add small dried shrimps to it.

  • her version is the thai version... the laos version is with padej=rottenfish/shrimp or crab paste & tamarind....

    the thai version is less fishy and with just lime juice.... i had it where they add full shrimp or shredded chicken breast... they were very good.

    i also love my version... with cooked tamarind sauce & cooked tiny crab... i like mine sweet, sour and medium spicy.

  • Yeah that's called dam deng it fundamentaly the same salad dish but with a different main ingredient. You can use runner bean too, dam touwa. Sorry don't mean to patronising.

  • this is more of the american style. if you go to an asian restaurant in the US, that's how they make it. because its catered to the americanized asians. if you go to southeast asia, the main ingredient is bla rah or badack. its a must! anyways, instead of papaya, try using green mangoes. its so yummy. also if you use papaya, you can also add tamarind in it.

  • the green mango one is called kerabu if i'm not mistaken. it's quite popular in Northern Malaysia. i usually dip it in a budu (fermented fish sauce).

  • Isn't this Isaan food, I love it but with crab in it and much more chili- I am a Norwegian and I tasted it for the first time on hollyday in Thailand-ate it everyday-Just love Thai food

  • @sigurd2401, no it is not only Isaan. We can put either crab or roast dry penuts. they r both delicious. When using crab, they call papaya salad Lao, when using penuts they call papaya salad Thai. But it is only a name because both style are Thai food.

  • @unforgettablelove85: it really depends on your own taste. some people like their papaya salad to be very light color (meaning not much flavor) and some people like there's really dark where it has more crab paste to it. I've seen some papaya actually lighter then this and it actually doesn't taste so bad.

  • You can't put shredded papayas before the palm sugar paste, that makes you unable to smash the sugar.

    by the way, she put too much papayas in, and obviously cannot smash it well

  • In Thailand we usually use a bigger mortar than this one to make Som Tum. The mortar she used is for making chilli paste.

  • Som Tam is an art. A good Som Tam maker would NEVER use those shredders, you have to hack it with a knife to get the proper texture. This is seriously hard to make correctly. The texture of the papaya and the balance of the sauce is the key. Once you learned to know the right taste, I always search out a great Som Tam and when I find it I order two - phet mak

  • Hey I tried making this salad without the mortar , mix it with you hadns is not a good idea. the peppers and the fish sauce stings your finger. Your hand will not smell too well either. I suggest buying a Mortar. not making it any other way. Very good Salad though.

    Tam Thai (Thai style) will put roast peanuts within.

    Tam Puu (Each Thai style) will put preserved crabs with salt within.

    Tam Pra Raa (Thai Isan style - Northeast of Thailand or Laos style) will put Pra Raa (pickled fish) within.
