  • Keith, I am really inspired by your flaky crust as that determines the "jamaicaness" of the patty.....I am in Trinidad and Tobago and they DO NOT have beef suet anywhere.....What is the best substitute you recommend?

  • A Friendly Tip: If you let the dough rest for at least half hour first, you'll get a better result with your dough because the gluten will have time to rest.

  • FYI: Annato is the proper yellowing powder for the pastry.

  • Nice video and that crust was flaky but I can't eat that suet due to me having slightly high cholesterol. I use canola oil to make my pie crust.

  • the bread you used for the bread filling didnt look like french bread, it looked more like cuban bread since it was really pale and flakey. cuban bread contains lard which gives the flakeyness like you said.

  • Hi Keith, I tried ur recipe but used a different filling so this time I'm gonna use ur filling recipe but any time I try to make flaky patties, It doesn't come out right, its always soft but I want them crispy. The last time I made these, used turmeric, beef suet, butter cuz they don't sell shortening in the uk, and others.

    If u make the filling maybe 2 wet lets say for an example, does that effect the crust in any way? (I am so desperate to get the recipe right). lol.

  • Very cool demo indeed Keith. Can you also please post the Jamaican style spicy juice chicken curry that comes with a big rice? In this city I couldn't find any Jamaican restaurant except one. If I buy any eatables from there, it gets a nasty smell before I reach home. I love Jamaican spicy beef patties and I shall try tomorrow. And will post the outcome ;-)

  • @whytesapph i tried turmeric yesterday when I made these, and it was not the same. It did not give the patties a intense yellow color as I saw in this video, and the dough taste like curry. I will buy the yellow coloring next time. But i did use 3 sticks of butter to replace the beef suet ( I cant find it anywhere and I am not about to order anything lol), and the crust came out wonderful. But I will use yellow coloring powder next time, that is really a must. Thanks Keith :)

I dont endorse using tumeric in the crust because the flavor is too strong and the coloring will be off. i recommend using my all purpose seasoning and the coloring powder not just because i invented it, but it makes damn good patties!!! hahha :-D thanks for watching!

  • @angelichebrew Hello my friend! thanks for watching :-) It wont taste the same, but you can use butter and butter flavored shortening. The combination will result in a decent texture. I do not endorse it because i dont sacrifice flavor hahah but if you must then use the alternatives :-) also you gotta use my seasonings :-D

  • @fitness160 Yes my friend! they freeze perfectly! but freeze them before baking. :-) and make sure you use my seasonings if you want them perfect!

  • greetings friends hhhahha Please pay attention.....as stated in the video, you CANNOT USE JUST ANY KIND OF FAT......BEEF SUET is a MUST!!! its the only fat that gives the crust its authentic taste and texture. Pork lard or shortening will not have the same effect or out come! trust me guys, I KNOW WHAT IM Talkin bout! I invented patties hahaha also You need to be using my All purpose complete seasoning found on my website! I guarantee that you will love it and thank me later! :-D

  • @evian721 thanks for watching. first take off any tough skin or membrane from the outside of the suet. then you can simply grate it using a cheese grater attachment on a food processor or you can simply cut it up into pea size pieces with a knife. also, you should be using keith lorren spices!!! :-)

  • @keithcookstv Thanks i actually was using the spices before finding the patties my aunty brought them for me :-) This crust is intimidating thus im not a baker lol but i will def let you guys know how it turns out... Craving a Juici patty led me to this tutorial which most resemble Jamaican famous flaky Juici patty not that tower isles crap

    i did everything u told me to, on making the pastry but it didnt turn out very good, i couldnt find suet so i used lard and it turned out VERY CRUMBLY!!! so wasnt that nice, but the meat was to die 4.. very nice.. can u pls send me another way to make it with out the suet..thx.. ohh and a hello all the way from AUSTRALIA!!! thx again keith.. :)

  • @mizexotic01 hello my dear! thanx for watching! i do not endorse using lard for this recipe, only beef suet. you can order beef suet from my website and we ship internationally. lard will give a different taste/texture. i will do some experimenting for you and get back to you on alternatives that work. :-D. did you you use my seasonings for the filling?

  • @kikadiva Hello my friend, suet is the best, most authentic, flavorful thing to use, however you can use lard. it just wont taste the same but itl still be good, also the yellow coloring powder has a slight taste but you can use annatto. some people use tumeric but i dont like tumeric in my crusts! the flavor is too strong. when i eat

  • @TriniRasta100 Hello my friend!! thanks so much for watching!!! makes me happy! :-D inorder to achieve that authentic taste, you have to use the beef suet. you may experiment with using frozen coconut oil or palm oil, or vegetqable shortening which would solidify when cold and produce flakes. the only problem with it is the difference in flavor and melting temperatures. You can keep the recipe the same but use different vegetable solid fats. you also can do soy and bean base fillings

  • OH gosh, keith yuh right about how you invent patties. Not one person I search up on youtube have the proper way to make it PERFECT like that. But some question i have to ask... Do I need to have the beef fat to get it like that? What would happen if I dont put it in there?... I would appreciate if you can answer for a vegan woman. Much love and blessing

  • @inbox282 absolutely! i had my butcher cut up and grate the fresh suet, and I froze it to use for the crust! make sure you use Keith's complete seasoning it makes all the difference!! :-)

  • Keith, I am definitely going to visit your website, and try to find a way to order the beef suet because I can't handle the other ways. I could look at the consistency of your patties via the video and see that it's the right way. The best patties are homemade. I knew a lady who used to put curried chicken and potatoes in hers... mmm good!

  • @Nickykj23 the dough wont rise. just let it sit in the refrigerator for about 20-30 minutes to allow the moisture to distribute, and for the gluten to rest.

  • My beef patty crust came out better than it has ever come out before, but it wasn't just right because I overworked the dough (so my husband says). I also didn't have any beef suet, and I live in NC in the mountains around a a ton of beef farms, and no one here has it. I really miss living in Atl and NY.

  • this recipe is very good and i love it! my only problem was when i attempted to make the patties was finding beef lard (suet) i live in chicago and pretty much all the grocery stores and markets i went to dont sell it one said it was illegal to sell it.. so is there any other way for me to get the lard or alternative?
