i think he's playing a C chord and lifting his middle finger and putting it back down to make the changes. then just moving the index finger to the normal notes. 3rd fret E string, then the open A, then 1st fret E string, but on that one the middle finger would start off already lifted, then put down. that's my best guess, sounds pretty close
