making empanadas with pie dough....really? great shortcut for people that have never had the real thing, pizza dough does not work either...is not like the dough is so tough to make! sorry

Supermarkets here sell empanadas pastry, and it comes already in the size you need. It's not the same as the pizza one. Google for images for "Goya" empanadas, I think those are sold in the US because they are mexican.
The one I described is an argentinean empanada, as I live in Argentina.
Well, if you want meat empanadas you should chop some onion, and then put some oil in a casserole then fry the onion until it's transparent, then add the meat (you have to cut it in little pieces) and cook it until it's done. Add olives if you like them, salt, and raisins. Then fill the empanada pastry with all that, and to the oven for aprox 40 minutes. You can put sugar over the empanada before cooking in the oven too. You can also add stuff in the filling like chopped carrots, etc

Just a tip on video as well...on some of the shots...get the camera closer to the food, I mean really close...it'll make the food the star...which I think is what you want.
Everything looks really good. One point of contention though...what you put on the meat was not a marinade it was a 'wet rub'. Marinade requires submersion i.e. "soaking" in a savory acidic sauce. You had the acid from the limes and the spices combined sort of made a sauce..but it wasn't immersed. Sounds picky, but if you're making a cooking show...make it as perfect as you can. ;)
What I liked of this recipie is that is Lowfat. Interesting how you used -Premade Pie Dough-. Good Idea. Have You tried to made them with Rice and Hamburguer meat?

Looks good - one thing though. It is not a good idea to use cooking spray next to an open flame. It is much safer to spray the grill first before turning on the flames.
