Inoue is embarrassing himself and his protege. His manners could use a bit more polish for someone who considers himself a professional chef. He behavior is more suited to a diner than a high class restaurant.
I compared the plating of iron chef to iron chef america. The plating here is a lot simpler than that of ICA. ICA incorporates a lot of designs using garnish and sauces and plates with freaky shapes. Here they stick to pristine porcelain. =)
if i were that sous chef that inoue hit(twice at least) i would scolded him xD seniority?? who cares, it was nearly the 21st century!! >=O i'd yell inoue off
Actually the chefs receive a list of possible ingredients first before the taping. They have some idea in the back of their mind before going out there.
Just the fact that these guys could come up with this on a drop of a dime is amazing! They dont find out the secret ingredient and sit and ponder what to prepare, they come up with these dishes on the spot! And to top it off they apparently taste great. I guess thats why they are the high calibur that they are.
not really... you just have to find a decent fish market... a lot of times, it might not be actual stingray, but skate instead... but, it's close enough...
I've never tasted stingray, but I have to say the dishes from both sides look great. I love clams, so I think Sakai-san's baked dish would probably be my favorite.

In Indonesia the kecap manis is used to hide the true taste of stingray,because really without it the stingray would taste really dry

If i remember correctly, they DO get a list of five possible main ingredients before the show; but they are not told which will be it.
If not it'll be impossible to plan the resources they might need.

or just normal grilled thn served with spicy chilli sour sauce.
1 thing great about it is, even it's BONES are chewable! nice texture :D but if not cooked well it smells salty pungent.

In Indonesia, we have grilled stingray with kecap manis (sweet soy sauce), then squeezed lime juice before serve. Now thats divine *drools*
