My Aunt used to send us the wafer but not lately. Also ham and Polish kiebessa.

Although I have done some research on Bigos, and I know that it is Poland's National Dish, Is there a certain time of year it is served( like at Christmas only ) or is it an everyday food one in Poland would make ?
bigos is traditionally served at Christmas, but not only then. It depends on family I suppose . For example my mom is making bigos on birthday or imieniny (that's something like bitrthday, an event connected with yout name). But sometimes she serves it as an everyday dish.
David, bigos is to be eaten everyday. My Mother is from Poland, so as a young kid we would go back to Poland in the summer for holidays and to meet the family. If I remember bigos would be served as fast food in towns and cities, with bread and a beer in shops in Poland. We still eat it with meat and potato dishes, but its equaly delicious on its own with a slice of bread or two!!

It is custom that we don't eat meat for same reason why we don't eat meat during Fridays of lent and why we didn't eat meat on Fridays before Vatican II. It shows a sign of respect, that we are giving up a dish we love. In early church, giving up meat was seen as a sign of reconciliation since those buying and eating meat were rich. It is a sign of humility and respect. Hering, Pierogi, i Oblacki. Thats Polish Xmas!
