if it breaks you may be overcooking it...too dry. when the khandvi is cooked it will be a dull, not shiny yellow and start balling up in the pot.
sorry i cannot be more helpful. it is a good thing to see made first hand.

ive tried this a number of times & still my khandvi never rolls properly instead it breaks when i try to spread.. plz suggest me when do i remove the batter off the flame & how do i know that the batter is completely cooked ?
