Taffy is in fact a nickname for people of South Wales because of a river that runs through our capital and other areas called the River Taff.
In terms of the carolling it's certainly not a natural custom, it may happen in some small communities perhaps but that would be across the UK not just in Wales, I fear you may be thinking of the Eisteddfod

I'm from very rural Wales & yes Chapel is big here but it is every weekend not just at christmas... cider is more west country than wales IMO. Us welsh sing all year round which competitions for young & old.
