I have a friend who's been preaching to me the merits of two plants in particular for high protein greens. Chia and Amaranth. She claims that Amaranth is the highest, and Chia is a close second place. What do you know about how Nettles ranks against Chia and Amaranth?
I'm inclined to cook the nettles first like Jocelyn did, but just let them get steamed longer. The fresh nettles after eggs can sting you. I speak from experience. But, if I had Paul hovering over me with a camera maybe I would've sped things up too!

Great video! Nettles are actually excellent raw when a bunch is put in a blender with fruit (banana & blueberries, etc) and water....the nettles with water in a blender have a taste similar to milk. This way you get all benefits of the raw greens. David Wolf even has a video of how to "taco" the raw nettle leaves and eat them plain! Pretty funny video, and we've done it a lot:) If there is a slight sting, the mouth neutralizes almost instantly.
I've been watching the runners off of the nettles I planted in the back last year throb viciously but no shoots yet! This is when I realized you must have shot this video last spring :D Seeing the video is not helping with my itch for spring hehehe

*Cooking* denatures the formic acid responsible for the sting. Don't try to eat nettles raw, even if they're mashed up.
