Well, you fight angels in this game and sometimes they drop their weapons (sometimes also called arms), which you can pick up to use against them. Therefore they are called "angel arms".

how often can you go into witch time?

It's more like a special bonus for dodging successfully; it's not like Devil Trigger, which you can activate at any time. As long as you dodge at the right moment, you'll be able to activate Witch Time with most of the enemies.

Man, this game sure is imaginitive! At first it looks like DMC but when you actually play it, you know that it has a unique atmosphere.
