Can someone explain to me the eye colour changes? What do they mean when they are black, or red, or gold? I haven't read the books, so any help from a fan is appreciated!

The eye color changes from the vampires indicate their level of hunger/blood type they drink, a very bright red is an indication of a recently feasting vampire on human blood, the volturi are human blood drinkers and that is why their eyes are deep red, like Victoria/James Laurent etc. Edwards eyes went black the time he sat next to Bella in Biology because the overwhelming crave he felt for her blood was conflicting with his resistance to tear her to pieces to get it.

The eye colour changes are due to how hungry the vampire is, or the type of blood they drink. Laurent, Victoria, and James all had red eyes due to the fact that they had all recently drank human blood. If a vampire goes too long without drinking blood, their eyes will go black.

Edward and the rest of the Cullens eyes are gold, because they drink animal blood. Animal blood isn't the same as human blood to a vampire, so it results in a different eye colour.
